Cupcakes

Is there any dessert quite as ubiquitous as the cupcake? I set out to make sweet little cakes - not quite vanilla or butter, not chocolate, not fruit. Just... cupcakes. Here's the recipe I settled on, perfect with just about any frosting you could want.

Ingredients
1.25 cups flour
0.5 tsp salt
1 tsp baking powder
0.25 tsp coriander (optional, but awesome)
0.25 cup butter
1 cup sugar
0.25 cup oil
1 egg yolk
2 egg whites
0.5 cup evaporated milk
1 tbsp vanilla

Directions
Preheat the oven to 350F. In a medium sized mixing bowl, combine the dry ingredients. Cream the butter and sugar together - I like to use a stand mixer set on medium speed with room temperature butter - until fluffy. Beat the oil, eggs, and vanilla into the butter/sugar mix. Slowly add first the evaporated milk, then the dry ingredients. Beat until thoroughly mixed. Pour into papers in a muffin/cupcake pan or silicone cups and bake 20-25 minutes, until a toothpick inserted into the middle of a cake comes out clean.

My favorite way to eat these is with either some simple jar frosting or a light glaze. I think they'd stand up well to buttercream or marshmallow fluff frosting as well. Let me know if you come up with any variations or awesome toppings!
